Although Yellow fin tuna is the most well-known tuna species in Europe, Big Eye tuna (Thunnus obesus) is at least as nice and we believe even slightly better. From the outside the tuna is bit more plump and, no surprise, they have bigger eyes! Inside, however, the colour is brighter and the higher fat contents results into a smooth texture and a creamy, rich flavour. In times when the yellow fin catch is extremely poor, many clients of course are changing to this other species. In Japan they prefer this species because of the fat contents and this also means that the price is normally higher. Currently, however, the price is very competitive.
